Nutty Oat & Chocolate Chip Bars

These cookie bars contain almost all of my favorite baking ingredients- chocolate (of course!), oats (oh yah) & walnuts (mmm…).

I love how filling these turned out.  To be sure, these include plenty of chocolate {to satisfy my addiction}, but with  the addition of the oats & walnuts you feel like you’re eating more than just fluff or plain ole’ sugar.

So, if you’re looking for a simple, yet hearty treat for your family, give these a try!  I think you’ll like ‘em!

Note- 99% of the time, I bake with whole grains & natural sugars.  I’ll do my best to include substitutions in case you don’t have some of these ingredients on hand, but I’d encourage you to give some of the healthier ingredients a try if you haven’t already.  If you’re worried your family will be turned off by the “healthier” taste, you can work them into it slowly by substituting only part of what the recipe calls for.  You may be surprised, however, at how good things taste by using the less processed ingredients!

Nutty Oat & Chocolate Chip Bars

3/4 c. butter, room temperature

1 c. sucanat (1/2 c. white sugar + 1/2 c. brown sugar also works)

1 egg

1 tsp pure vanilla extract

1 3/4 c. whole wheat pastry flour (you can also use all-purpose)

3/4 tsp baking soda

1/4 tsp sea salt

1 c. rolled oats

2 c. semi sweet chocolate chips

1 c. walnuts, chopped

Preheat the oven to 375°.

In the bowl of a stand mixer, cream the butter, sugar, egg & vanilla…

Add flour, baking soda, sea salt & oats, mix well.

Fold in the chocolate chips & walnuts using a spatula…

Be sure to take a little taste, it’s a critical step.

Grease a 9×13 baking dish…

I like to use the butter remnants that are left on the butter wrappers, I wouldn’t ever want to be caught wasting butter, oh no!

Use your spatula to spread the cookie batter into the prepared dish…

Bake for 16-19 minutes, until golden brown.  Be careful not to over bake!

Allow to cool in pan before cutting into bars.  Enjoy!
